Weekend breakfasts can be simple and easy to make. Having your hands full shouldn’t stop you from getting your day started right. Cheesy Egg & Avocado Sandwich Recipe (Serves 2)
– 4 eggs
– 2 tablespoon milk
– 2 tablespoon sour cream
– 1/2 cup mild cheddar cheese (shredded)
– 1 avocado
– salt/pepper to taste
– rustic or sourdough bread
– olive oil
In a small bowl quickly whisk the eggs, milk and sour cream. Melt butter in a saute pan on a low flame. Pour the egg mixture into the pan and continue to whisk the eggs while cooking. Add the cheese and mix it with the eggs. The key is to slow cook the eggs, do not overcook them! Once all the cheese has melted remove from heat. Add salt and/or pepper to taste.
Brush olive oil mixed with a pinch of salt onto rustic or sourdough bread and toast. Arrange sliced avocado onto the toasted bread. Top it off with the scrambled eggs. Garnish with chives and sprinkle some shredded cheese. Enjoy!
