The best thing about this quick and easy Mini No Blueberry Pie is you can make it in the blink of an eye. But keep in mind to make lots, because they’ll also be gone before you can say “where’s my pie?!” Prep Time: 5m | Cook Time: 15m | Total Time (including assembly): 30m

Ingredients

– 4 cups of Fresh From Florida Blueberries
– 1/2 lemon – juiced and zested
– 2/3 cup sugar
– 1 tbsp cinnamon sugar
– 1/8 tsp nutmeg
– 1 tbsp pure vanilla extract
– Confectioners powdered sugar
– 3 packages of Mini Fillo (Phyllo) Shells (15 count)

Directions

1. Wash blueberries and remove any stems remaining.
2. Juice and zest 1/2 lemon.

3. In a non stick sauce pan combine 2 cups of blueberries, lemon juice & zest, sugar, cinnamon sugar, nutmeg and vanilla over medium to high heat.
4. Bring to a slight boil, then reduce to a low simmer for another 7 minutes.

5. Remove from heat, place in a bowl and add remaining blueberries.
