We’ve always been a meat and potatoes kind of family. Beef Stew, Steak and Potatoes, and of course a good helping of Irish Shepherd’s Pie! It’s my absolutely favorite dish, and I enjoy ordering it whenever I see it on a menu. If you’ve been thinking about trying it, or making it yourself – do it! I hope you enjoy this Irish Shepherd’s Pie recipe as much as I do.
Irish Shepherd’s Pie Recipe Ingredients – Shopping List
1 1/2 lbs ground beef
2 bags instant mashed potatoes
1 c frozen peas
1 c baby carrots sliced
1 large yellow onion, finely diced
1 egg, beaten
1 tbsp. unsalted butter
Grated Parmesan cheese
1 tbsp. olive oil
1 tsp. each salt and pepper
2 tsp. fresh thyme leaves
2 tbsp. flour
4 tbsp. tomato paste
4 tbsp. Worcestershire sauce
1 c chicken broth
1/4 c red wine
Irish Shepherd’s Pie Recipe Directions
Step 1. Preheat oven to 400°F.
Step 2. Heat the olive oil over medium-high heat in a large sauté pan, place the sliced carrots in the pan and cook until tender.
Step 3. Add onions to the carrots and cook for 5 minutes until the onions become translucent.
Step 4. Add beef and spices (salt, pepper, thyme leaves); cook until the beef is browned.
Step 5. Drain the meat mixture and place back in the pan; add the butter and peas and place back on the stove on medium heat.
Step 6. Stir the mixture until the butter is melted.
Step 7. Sprinkle with flour and stir until combined.
Step 8. Add tomato paste, red wine and Worcestershire sauce, tossing to combine.
Step 9. Add the chicken broth; once the mixture thickens remove from heat. Transfer the mixture to a baking dish.
Step 10. Make the mashed potatoes as directed on the package.
Step 11. Scoop the potatoes on top of the meat mixture; spread the potatoes over top evenly.
Step 12. Brush beaten egg on top of the mashed potatoes, top with Parmesan cheese and bake for 20 minutes.

I have made a variation of his before and it is really good! I like how it is an all in one type meal. Also living in a colder climate, this works so well on cold days!
Looks so nice and filling, I’d make many batches as these freeze well.
I have never tried Sheperd’s pie before! I like that it is a one pot, easy to cook dish!
