We love learning about other cultures and recreating traditions with our own family to celebrate. We have friends that come from all different backgrounds and teaching the girls about different cultures helps them grow. Being that we are a multicultural family, it’s important to us not only to incorporate each of our cultural holidays and traditions, but to create new ones. The girls attend a religiously affiliated preschool where they learn about our religion. It is my job to also teach them about acceptance of others and their religion, culture and traditions.
Mexican Las Posadas
One of the newest holidays we are celebrating at home in honor of our Mexican friends is Las Posadas. The holiday of the Mexican Las Posadas, which means “the inns”, is a 9-day Mexican Christmas tradition based on the biblical journey of Mary and Joseph and their search of a safe place, or “inn,” to stay before the birth of Jesus. Mexican Las Posadas is a holiday which brings friends, families and neighbors together as they participate as “innkeepers” by hosting a Posada at a different home each night. We were super excited to participate and create a delicious Las Posadas Mexican recipe to share with our friends and family. Food is an essential element to the festivities and includes both sweet and savory holiday recipes like tamales, desserts and even aquinaldos – small bags filled with treats and candies – as party gifts for the guests of the “inn” for their journey.
To start off the night I told my friends all about how HERDEZ® is celebrating Las Posadas with an exclusive giveaway on their Instagram page. The Grand Prize winner will have dinner prepared by a personal chef for up to 4 people in their very own home! We served HERDEZ® Salsa Casera with chips while I finished up cooking to keep my guests busy while they entered the giveaway.
I wanted to make easy Mexican recipes that would fun for both the adult and children. Something they could build and make their own, using some delicious ingredients like Mexican crumbling cheese. Instead of using regular tacos I used round corn tortilla discs and chips. I made some taco meat, crumbled up the Mexican cheese, shredded cheese, tomatoes, sour cream, and of course refried beans. The real winning ingredient of the night was the HERDEZ® Salsa Casera and HERDEZ® Salsa Verde which brought a unique flavor to a traditional recipe. By adding the HERDEZ® Salsa Verde directly into the beef I was able to give my guests an explosion of flavor they’ve never experienced before.
To give them ideas of how to create their own meals I made a few myself to display. I used some of the small tortilla chips to show the kids how to build their own. The big tortilla discs were used for the adults and we created a type of Mexican pizza. On the first disc I put refried beans and some of the beef with HERDEZ® Salsa Verde, then added another disc on top and layers that with sour cream, more beef, tomatoes, shredded cheese, Mexican crumbling cheese and topped it off with both HERDEZ® Salsa Casera and HERDEZ® Salsa Verde! It was a hit for sure. The adults and kids had a great time building their own tortilla dishes.

- HERDEZ® Salsa Casera
- HERDEZ® Salsa Verde
- 1.5lb ground beef
- Taco seasoning
- salt
- pepper
- garlic
- Mexican crumbling cheese
- Shredded cheese
- Tomatos
- Refried beans
- Large corn tortilla discs
- Round corn tortilla chips
- Add 2 tablespoons of HERDEZ® Salsa Verde to your ground beef while cooking.
- Once browned, drain meat.
- Add taco seasoning and 2/3 cup of water, boil and allow to simmer for 3-4 mins for liquid to thicken.
- Set up "work stations" or a buffet type table to allow guests to build their own pizzas using either the large or small corn tortilla discs and chips.
- Be sure to top with HERDEZ® Salsa Casera and HERDEZ® Salsa Verde for authentic flavor!
- Use the small round corn tortilla chips for the kids and the large corn tortilla discs for adults.

Seeing this makes me miss eating mexican food. With my grandfather being born and raised in Mexico City , Mexico., we ate it all the time but I had to quit eating it due to stomach problems as I got older. This recipe is awesome and will pass it on to my daughter to try out.

The Salsa Verde is a little spicy, but the regular salsa is not too bad!
