Who says children shouldn’t play with their food? How else will they learn about textures and using their imagination to make a masterpiece of their own. Okay so let’s talk about my adventures in creating a fun dinner for the girls with our DIY Old El Paso Soft tortilla boats and Avocados from Mexico. Let me first point out that Preemie opted to eat just the avocado for dinner, and I totally let her. Why? Because children should be able to choose what they want to eat from time to time to entice them to explore their palate. Em on the other hand was so excited seeing me shredding cheese and prepping everything in separate bowls for our taco bar.
I mixed things up by making traditional beef using Old El Paso Original Taco Season Mix and a chicken fajita mix using the NEW Old El Paso Chipotle Fajita Sauce. This gave everyone more options to choose from. I cut up tomatoes, shredded cheese, diced Avocados from Mexico, chopped lettuce, and scooped out sour cream into individual bowls. Papa was the first to dig in to the taco bar and actually made a combo beef and chicken taco. I had one of each….with lots of everything on top….and extra avocado. Ooohhhh and Old El Paso Taco Sauce, lots of taco sauce.
I remember the cashier at Publix looking at the belt as my items rode their way over to her and she excited said “Ohhh it must be taco night”. With exclusive savings on Old El Paso and other ingredients like Avocados from Mexico at Publix, who can resist a DIY Taco Night?
As I mentioned previously, Preemie was quite happily enjoying her diced avocado, and even ate a few yellow pepper strips. Em had an absolute blast. Toddlers can be so much fun to watch. She actually made an all veggie and avocado taco, with a dabble of sour cream.
My girlfriend Tiffany stopped by when I sent her a picture of what we were eating for dinner. It was her first day at a new company so I was excited to feed her a good home cooked meal after a long day at work. She enjoyed the DIY Taco Bar and the unique flavors of the beef and chicken.
Apparently I made a feast for way more than my family of four, which was totally fine by me because LEFTOVERS! I didn’t have to cook dinner tonight and simply made some jasmine rice. Then I loaded my plate with the rice, added some beef, chicken fajita, avocados and dinner was served. Two evenings worth of dinner was easily created making my savings even bigger.

Did you know that more than 1.3 billion pounds of avocados are consumed in the United States every year? Can I tell you a secret?? There was actually a time when I didn’t much like avocados. My mama used to eat them all the time and I always made face at her. Then one day I had some guacamole and I was hooked, now I have my own Avocado recipe.

- 1 Old El Paso Soft Tortilla Taco Boats
- 1 Old El Paso Mild Taco Sauce
- 1 Old El Paso Chipotle Fajita Sauce
- 1 Old El Paso Original Taco Seasoning Mix
- 2 Avocados from Mexico
- 1lb Boneless chicken breast
- 1lb Ground Beef
- 1lb Block of Chedder Cheese
- 1 Green Leaf Lettuce
- 1 Red Pepper
- 1 Green Pepper
- 1 Yellow Pepper
- 1 Spanish Onion
- 2 Medium Tomatoes
- 1 Small Sour Cream
- Slice your chicken, peppers and onions into 1/4 to 1/2 inch strips. Add a tablespoon of oil to a wok and cook for 20 minutes. Add in the Chipotle sauce and cook as per instructions on packaging.
- Brown your beef in a separate pan, adding in the taco seasoning mix and cook as per instructions on packaging.
- Dice tomatoes, lettuce, and avocados, place in individual bowls. Place sour cream in a separate bowl.
- Grate at least half a block of chedder cheese (or purchase already shredded) and place in a separate bowl.
- Once your meats are cooked, place them in bowls and set all the individual bowls on the table.
- Each person gets to create their own taco using only the ingredients they prefer for a meal they are sure to love! You can add any kind of topping your heart and palate desire to your taco bar.
