I received a Sugar Free Angel Food Cake and Chocolate Chip Loaf, free of charge, for review purposes from Butterfly Bakery.

I am not a huge sweets person, but when I get the craving I go all out. I love my ice cream, Nutella, cookies, Nutella, brownies, did I mention Nutella yet? These are for special treat days because who can possibly handle all the sugar and calories on a regular basis. With Butterfly Bakery you can kiss those worries goodbye.

I really wish I could share with you how the Chocolate Chip Loaf tasted but alas I didn’t even get a crumb. J devoured it. I didn’t even get a chance to take a picture of it or the container. I think he may have even eaten the container because by the time I got home it was as if the loaf had never existed.

What I can share with you is that J absolutely loved it. He scarfed it down with a glass of milk and never looked back, only because he knew no one was home. He didn’t even realize that it was sugar-free. Insert Happy Mama dance here.

Since it was also a sugar free product I felt comfortable letting her have some as a snack. It was soft and fluffy, reminded me of my very own Angel Food Cake recipe. Em’s loved it! She kept asking for more. I couldn’t break her heart so I gave her another small piece and put the rest out of eyes view. It was clearly made with love.

We can’t wait to have it again. This time I want to turn it into an improvised Strawberry Shortcake of sorts. Could you imagine how it would taste with the juices of the strawberries dripping down and being soaked up by the Angel Food Cake? MMMmmmmmm….

In 1998, I started experimenting with Sugar Free desserts that my mom could enjoy. See, she has diabetes and the choices at the time were limited. I set out on a mission to satisfy her sweet tooth. This was no easy task, as she is an exquisite baker and very tough critic.

I kept experimenting with sugar-free recipes, baking cakes and muffins – even creating my own buttercream frosting… until one day, my Mom took a bite of my cake and declared it, “Simplesmente perfeito!” (’Just perfect’ in Portuguese). I knew I was on to something when I started to get requests from friends and family who didn’t even have diabetes….. And The Butterfly Bakery was born.
