We grew up eating salmon weekly in our home. It was always one of my mamas favorite dishes to prepare. Salmon is easy to work with, and a 2 inch thick cut of salmon takes just 20 minutes to bake. I highly recommend seasoning it with a citrus blend, spraying with Pam and popping it into the oven. Served with a side of jasmine rice and veggies, you can’t go wrong for dinner.   • I know salmon is healthy. I just don’t like it. I enjoy fish but it has to be all white, and flaky. Very mild with no fishy taste.

  • We have friends who have a salmon farm off the west coast of Ireland so we always have a side or two in the freezer. I love smoked salmon with sour cream served on Guinness bread – gorgeous!

  • I knew that salmon was one of the best foods to eat but I didn’t know until what kind of health benefits it had for me. I don’t really like salmon mainly because it is hard for me to get past the texture but I will definitely be talking to my husband, who is a chef, and see if we can come up with a way I can eat it.
