I’d Rather Be Cooking
Honestly and truly I’d rather be cooking than anything else. No laundry, no cleaning, no windows – just leave me in the kitchen! Experimenting is what I do best when it comes to cooking. Usually I just work with whatever I find in the fridge and cabinets, and make it work. With the early availability of fresh produce thanks to Florida Farmers who make it easy for us to each fresh produce year-round, I was able to pick up blueberries, peppers and tomatoes – FRESH FROM FLORIDA!

I had a hard time deciding between making the Mini No Bake Blueberry Pie or a Mini Quiche with Peppers and Tomatoes – so I let my readers decide with a vote on Facebook. Clearly the Mini No Bake Blueberry Pie won – and Papa is sure glad it did because fresh blueberry happens to be once of his favorite fruits. There’s nothing better than using fresh ingredients no matter what you are cooking up in the kitchen. Frozen or canned just isn’t the same, especially when making this No Bake Blueberry Pie recipe.
No Bake Blueberry Pie Recipe
The best thing about this quick and easy Mini No Blueberry Pie is you can make it in the blink of an eye. But keep in mind to make lots, because they’ll also be gone before you can say “where’s my pie?!” Prep Time: 5m | Cook Time: 15m | Total Time (including assembly): 30m
– 4 cups of Fresh From Florida Blueberries
– 1/2 lemon – juiced and zested
– 2/3 cup sugar
– 1 tbsp cinnamon sugar
– 1/8 tsp nutmeg
– 1 tbsp pure vanilla extract
– Confectioners powdered sugar
– 3 packages of Mini Fillo (Phyllo) Shells (15 count)
1. Wash blueberries and remove any stems remaining.
2. Juice and zest 1/2 lemon.
3. In a non stick sauce pan combine 2 cups of blueberries, lemon juice & zest, sugar, cinnamon sugar, nutmeg and vanilla over medium to high heat.
4. Bring to a slight boil, then reduce to a low simmer for another 7 minutes.
