Coffee, chocolate and cupcakes…a match made in heaven! There is nothing more that I enjoy each more than my cup of coffee. I don’t even make it until I know full well I can actually enjoy the first sip still piping hot without someone calling me away from my beloved cup. So when there isn’t any time to enjoy my coffee hot, my go to would be mocha cupcakes chock full of all the goodness I love and enjoy – chocolate and coffee rolled into a cupcake, or breakfast muffin should you choose to call it such LOL. Mocha Cupcakes Recipe

Cupcake Ingredients
  1. 1 C soft sweet cream unsalted butter
  2. 1 egg
  3. 1/2 C whole milk
  4. 1 1/3 C flour
  5. 1/2 C cocoa powder
  6. 1/4 tsp baking soda
  7. 1 tsp baking powder
  8. 1/4 tsp salt
  9. 1 C granulated sugar
  10. 2 tsp vanilla extract
Frosting Ingredients
  1. 3 C powdered sugar
  2. 1/2 C cocoa powder
  3. 1 C sweet cream unsalted butter
  4. 5 Tbsp heavy whipping cream
  5. 3 Tbsp cooled freshly brewed coffee
Directions
Cupcakes
  1. Preheat oven at 350
  2. Line cupcake pan with paper cupcake liners
  3. Cream sugar with butter until light and creamy
  4. Add egg
  5. Add vanilla extract
  6. In a separate bowl combine and mix thoroughly flour, baking powder, baking soda, salt, and cocoa
  7. Begin adding the dry mixture in with the butter and sugar combination, alternating the dry ingredients with the milk
  8. Gently stir in the fresh brewed coffee, beat well until all combined
  9. Scoop the batter into the paper liners until each cup is 3/4 filled
  10. Bake at 350 for 21 minutes
  11. Remove from baking pan and allow to cool
Frosting
  1. Put softened butter in the mixing bowl, powdered sugar and cocoa, and beat until the combination looks like little pebbles.
  2. Add whipping cream and brewed coffee and mix until peaks appear
  3. If it doesn't peak, then add 1/2 C more of powdered sugar
  4. Continue to mix until the frosting forms peaks
  5. Frost using a piping bag or use a zip lock bag by cutting a corner adding a tip to frost your cupcakes

  • I couldn’t picture me eating this but my son and my step dad and husband who all love coffee so much maybe they would try it and I know my son is 9 and I yell at my step dad when he gets him coffee sometimes, but rarely ever anymore. My son loves the milkshakes from wawa that is cappuccino so I am sure he’d love this coffee mocha cupcake.
