The holidays may be over, but the sweet treats of the season haven’t stopped in my house. The craziness surrounding the holidays always keeps me so busy that many of the recipes I want to try just don’t get done. Normally, those recipes fall by the wayside with a promise to make them next year…only to forget by the time that next year arrives.

So this year, I’ve decided to bring those tastes of the season right into the New Year, starting with this Mint Chocolate Pudding Fudge Recipe that I found on the Walmart Kraft Foods website. Because, why shouldn’t the new year be delicious? And chocolate mint seems like a pretty good place to start.

This easy to make Mint Chocolate Pudding Fudge comes together in minutes and is every bit as fabulous as it looks. The longest part of this recipe is waiting for it to set in the refrigerate it so you can eat it, but that time is oh so worth it.

While many worry that adding mint extract will overpower a recipe, there’s no concern of that there. The chocolate is rich and dense – as you expect with fudge – with just a hit of mint inside and little mint crunch on top. It’s the perfect balance. And those marshmallows? Amazing! No doubt my kid’s favorite part of this recipe. They add a little bit of light and airy to a dense, tasty fudge.

This is one recipe that I’m glad I got the chance to try and will definitely be making again. If your Valentine is a mint lover at heart, the rich chocolate, along with the red and white color incorporated into this recipe, make it an ideal treat. Enjoy!

Mint Chocolate Pudding Fudge Ingredients:

2 pkg BAKER’S Semi-Sweet Chocolate (4 oz.), divided
1/2 cup butter or margarine
1/2 cup water
1 tsp peppermint extract
1 pkg JELL-O Chocolate Flavor Instant Pudding (3.9 oz.)
3 cups powdered sugar
2/3 cups JET-PUFFED Miniature Marshmallows
1/3 cup finely crushed starlight mints

Step 1 – Line a 8-inch square pan with foil, with ends of foil extending over sides. Microwave 4 oz. chocolate, 6 Tbsp. butter and water in large microwaveable bowl on high for 2 minutes or until butter is melted; stir until chocolate is completely melted and mixture is well blended. Add peppermint extract and dry pudding mix; stir an additional 2 minutes.

Step 2 – Add powdered sugar, 1 cup at a time, stirring after each addition until well blended. Pour into prepared pan; press into even layer with back of spatula.

This fudge starts to set quickly, so be sure to move it from the bowl into the lined pan as soon as you’re done stirring.

Step 3 – Microwave remaining butter and chocolate in large microwaveable bowl for 90 seconds or until butter is melted; stir until chocolate is completely melted and mixture is well blended. Pour over fudge layer in pan; spread to completely cover bottom layer. Top with remaining ingredients.

Tip: While you will be able to easily sprinkle the marshmallows over the fudge, the crushed mint may prove more difficult. Instead of trying to sprinkle them directly from the measuring cup, consider taking a few of them between your fingers and sprinkling them a little at a time. This will make sure they get evenly distributed.

Step 4 – Refrigerate 2 hours or until firm. Use foil to remove fudge from pan before cutting to serve.

At 14 yrs old, he devours everything in the house so this one, I may have to hide them so dad can enjoy them too. lol.
